You actually should be officially divorced if it was issued, even if you don't have a copy. (NY Dom Rel L § 170) The copy is just your confirmation. You may also let you order it online. (NY CPLR § 8016)

How can I get my divorce decree when my ex-partner won’t send it?

That is the official clerk email. It can take a few days to hear back, but you can order the decree directly through them.

Do you know whether, if I wanted to remarry, not her, but someone else, would that be possible to move to the States, and would I need to start the process of immigration again as I have been out of the country for more than 5 years as a legal resident?

If you remarry, you would indeed have to be re-sponsored since after one year, your green card is considered surrendered.
